L\u00e1valas bien con agua corriente y p\u00e1rtelas por la mitad o en cuatro trozos.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Pela el tercio inferior de los esp\u00e1rragos y c\u00f3rtalos en trozos peque\u00f1os. Pica las chalotas. Ralla fino el queso. Rehoga la mitad de las chalotas con una cucharada de mantequilla. A\u00f1ade las orecchiette y el caldo poco a poco. Remueve de vez en cuando. Despu\u00e9s de 15\u00a0minutos de cocinado, a\u00f1ade los esp\u00e1rragos y cu\u00e9celos unos 10-15 minutos m\u00e1s.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Rehoga el resto de las chalotas y las colmenillas con una cucharada de mantequilla. A\u00f1ade el jerez y deja que hierva. A\u00f1ade la nata y cuece un par de minutos a fuego lento. Despu\u00e9s, condimenta con sal y pimienta. Remueve las colmenillas y el queso, mezcl\u00e1ndolas con las orecchiette ya cocidas.
