Despu\u00e9s picamos la cebolla y preparamos la sart\u00e9n con aceite para fre\u00edr los daditos de jam\u00f3n o tocino magro. Ahora sacamos los daditos de jam\u00f3n fritos de la sart\u00e9n y los apartamos a un lado. A continuaci\u00f3n, fre\u00edmos las chiriv\u00edas en la misma sart\u00e9n, a\u00f1adimos las cebollas picadas y las salteamos a fuego lento unos 3 minutos. Agregamos los daditos de patatas y el caldo, y lo dejamos recocer a fuego lento unos 20-30 minutos, hasta que la sopa quede bien espesa y suave. Despu\u00e9s colamos la sopa por el pasapur\u00e9s y, si es necesario, a\u00f1adimos otro poco de caldo. Ahora agregamos los daditos de tocino magro tostado a la sopa y sazonamos con mostaza, sal y pimienta.\r\n\r\nDespu\u00e9s cortamos los cebollinos en aros peque\u00f1itos. El queso Emmentaler AOP lo cortamos en lonchas de 3 mil\u00edmetros de espesor y el pan en rebanadas finas de 7 mil\u00edmetros. Colocamos las rebanadas de pan en una bandeja de horno y las tostamos unos minutos en el horno.
