Carnaroli, Arborio\r\naprox. 1,2 l de caldo de verduras caliente\r\n25 g de pi\u00f1ones\r\n2 naranjas ecol\u00f3gicas\r\n125 g de queso Emmentaler AOP\r\n50 g de r\u00facula\r\nsal y pimienta","recipe_preparation":"Primero pelamos el apionabo y lo cortamos en dados de unos 1 \u00bd cm. Despu\u00e9s picamos la cebolla y el ajo bien finos, preparamos una sart\u00e9n con un poco de aceite, a\u00f1adimos el apio, la cebolla y el ajo y lo estofamos a fuego lento. Seguidamente, agregamos el arroz y lo estofamos, hasta que quede casi transparente. Despu\u00e9s vamos a\u00f1adiendo el caldo de verduras, mientras que removemos con un cuchar\u00f3n dejamos que cueza unos 20 minutos a fuego lento.\r\n\r\nMientras que cuece el arroz tostamos los pi\u00f1ones en una sart\u00e9n, hasta que obtengan un color dorado. A continuaci\u00f3n, raspamos la c\u00e1scara de una naranja con la raspadora fina, pelamos las dos mitades de la naranja y sacamos con cuidado los gajos de la naranja. Ahora raspamos el queso Emmentaler AOP con una raspadora fina, y lo mezclamos con el arroz y el salteado de pi\u00f1ones, gajos de naranja y r\u00facula, y lo removemos con un cuchar\u00f3n.
