Luego agregar poco a poco el caldo, dejar hervir suavemente y remover de vez en cuando.\r\n\r\nRetirar el arroz del fuego cuando est\u00e1 casi a punto, pero a\u00fan un poco crujiente, agregar la mantequilla fr\u00eda restante as\u00ed como el Emmentaler AOP rallado y remover fuertemente.\r\n\r\nDejar reposar el arroz en el sart\u00e9n tapado otros 3 minutos y decorar los platos con la crema de bals\u00e1mico.
