Cuando est\u00e9 hecho, esc\u00farrelo y d\u00e9jalo enfriar bajo agua corriente durante unos minutos. C\u00f3rtale una tapa a los tomates, saca la parte de dentro con cuidado, corta en dados la pulpa extra\u00edda y ap\u00e1rtalos. En un recipiente, mezcla el arroz con las aceitunas, las alcaparras, los tomates cherry cortados en dados peque\u00f1os y la pulpa de los tomates coraz\u00f3n de buey. Condimenta con el aceite y un poco de c\u00e1scara de lim\u00f3n rallada, y luego m\u00e9zclalo todo bien. A\u00f1ade la menta picada y 100\u00a0g de Emmentaler AOP cortado en dados peque\u00f1os. Sazona con sal y rellena los tomates con el arroz. Por \u00faltimo, decora con algunos dados de Emmentaler\u00a0AOP y los alcaparrones.
