Dans une grande po\u00eale, faire revenir les lardons sans mati\u00e8re grasse jusqu\u2019\u00e0 ce que le gras fonde. Ajouter le poireau et le sel et faire revenir 3 minutes \u00e0 feu moyen. Incorporer ensuite les oignons et les faire fondre jusqu\u2019\u00e0 ce qu\u2019ils deviennent transparents.\r\n\r\n2. Ajouter la farine, faire encore revenir une minute, puis d\u00e9glacer avec le vin blanc. Ajouter le thym et les \u00e9pices, puis laisser mijoter jusqu\u2019\u00e0 \u00e9vaporation compl\u00e8te du vin blanc. Retirer la po\u00eale du feu et laisser refroidir au moins 10 minutes.\r\n\r\n3. Mixer tous les ingr\u00e9dients pour l\u2019appareil, puis incorporer la mixture au m\u00e9lange poireau-oignons refroidi dans la po\u00eale.\r\n\r\n4. Sortir la p\u00e2te du r\u00e9frig\u00e9rateur au dernier moment, afin qu\u2019elle soit bien froide au moment d\u2019ajouter la garniture. Placer la p\u00e2te avec le papier cuisson dans le moule \u00e0 tarte et piquer plusieurs fois le fond avec une fourchette. R\u00e9partir le m\u00e9lange au poireau sur le fond de tarte froid et rabattre les bords de p\u00e2te afin que le contour soit un tout petit peu plus haut que la garniture et l\u2019emp\u00eache de d\u00e9border.\r\n\r\n5. Faire cuire la quiche env. 37 \u00e0 40 minutes sur la grille inf\u00e9rieure du four pr\u00e9chauff\u00e9 \u00e0 220 \u00b0C (vo\u00fbte et sole).\r\n\r\n6.
