Sinon, placer les escalopes entre deux feuilles de papier cuisson et les aplatir soi-m\u00eame \u00e0 l\u2019aide d\u2019un attendrisseur de viande ou d\u2019un rouleau \u00e0 p\u00e2tisserie.<\/li>\r\n \t<li>Dans une assiette creuse, battre les \u0153ufs avec le sel, le paprika et le poivre.<\/li>\r\n \t<li>Verser la farine dans une assiette plate et la farine panko dans une autre assiette plate.<\/li>\r\n \t<li>Garnir chaque escalope d\u2019une tranche de jambon. Garnir ensuite seulement la moiti\u00e9 de chaque escalope d\u2019Emmentaler\u00a0AOP et de pomme en laissant un bord d\u2019env. 1\u00a0cm. Replier les escalopes et aplatir le bord \u00e0 l\u2019aide d\u2019un attendrisseur de viande, ou, astuce: tapoter avec le bord d\u2019une bo\u00eete de conserve pour que les bords tiennent bien ensemble.<\/li>\r\n \t<li>Retourner d\u00e9licatement les escalopes farcies dans la farine, puis dans l\u2019appareil \u00e0 base d\u2019\u0153ufs et enfin dans la farine panko. Bien appuyer dans cette derni\u00e8re de mani\u00e8re \u00e0 ce que la surface soit bien recouverte de panure.<\/li>\r\n \t<li>Pr\u00e9chauffer le four \u00e0 80\u00a0\u00b0C (chaleur sole-vo\u00fbte), placer une grille au milieu du four. Recouvrir une assiette de papier absorbant et la poser sur la grille.<\/li>\r\n \t<li>Dans une po\u00eale, faire chauffer un doigt d\u2019huile de tournesol \u00e0 feu moyen. Y placer 2\u00a0cordons-bleus, faire cuire pendant 4 \u00e0 6\u00a0minutes, retourner \u00e0 mi-cuisson. Une minute avant la fin, ajouter la moiti\u00e9 du beurre dans l\u2019huile. Terminer la cuisson des cordons bleus des deux c\u00f4t\u00e9s.
