Peler le tiers inf\u00e9rieur des asperges et les couper en tron\u00e7ons de 3 cm de long. Mettre les asperges dans le bouillon, couvrir et faire cuire 10 minutes \u00e0 feu doux jusqu\u2019\u00e0 tendret\u00e9.\r\n\r\nD\u00e9tacher le couvercle des vol-au-vent. Disposer les vol-au-vent et les couvercles sur une plaque \u00e0 four. Glisser la plaque dans le four froid et faire monter la temp\u00e9rature \u00e0 180 \u00b0C (chauffage vo\u00fbte et sol ou 160 \u00b0C en chaleur tournante). Faire cuire 10 minutes environ.\r\n\r\nPendant ce temps, \u00e9goutter les asperges dans une passoire en r\u00e9cup\u00e9rant le bouillon. R\u00e9duire environ un tiers des asperges en pur\u00e9e (si possible le tiers inf\u00e9rieur) avec le fromage frais, le cidre et l\u2019Emmentaler AOP. Allonger avec du bouillon jusqu\u2019\u00e0 obtention d\u2019une sauce fluide et \u00e9paisse.\r\n\r\nPorter la pur\u00e9e \u00e0 \u00e9bullition sans cesser de remuer, saler, poivrer. Ajouter les morceaux d\u2019asperges restants, r\u00e9chauffer bri\u00e8vement.
