Couper le c\u00e9leri en fines tranches de 5 mm. Faire chauffer l'huile et y faire revenir bri\u00e8vement l'\u00e9chalote et l'ail. Ajuouter le riz et le faire revenir jusqu'\u00e0 ce qu'il soit transparent, mouiller au vin rouge et faire mijoter. Ajouter le bouillon au fur et \u00e0 mesure en remuant r\u00e9guli\u00e8rement et faire mijoter 20 minutes. Ajouter les branches de c\u00e9leri pour les 5 derni\u00e8res minutes de cuisson.\r\n\r\nCouper l'Emmentaler AOP en d\u00e9s de 7 mm. Couper le radicchio en 4, retirer le trognon et le couper en lani\u00e8res. Faire caram\u00e9liser le sucre dans une po\u00eale. Ajouter le jus de citron et environ 0,5 dl d'eau et faire r\u00e9duire jusqu'\u00e0 ce que le caramel soit dissous.
