Noilly-Prat\r\n1 dl de bouillon de l\u00e9gumes\r\n2 dl de cr\u00e8me\r\n1 citron non trait\u00e9\r\n1 botte de cerfeuil Poivre rose","recipe_preparation":"Hacher finement l'oignon et l'ail et les faire revenir dans une cuill\u00e8re \u00e0 soupe d'huile. Ajouter le riz, faire bri\u00e8vement revenir. Ajouter le bouillon au fur et \u00e0 mesure, faire mijoter 20 minutes environ en remuant r\u00e9guli\u00e8rement.\r\n\r\nR\u00e2per finement l'Emmentaler AOP, l'incorporer au riz, saler et poivrer. Etaler le risotto sur une feuille de papier sulfuris\u00e9, sur une \u00e9paisseur de 2-3 cm et laisser refroidir.\r\n\r\nCouper les l\u00e9gumes en petits morceaux. D\u00e9couper des ronds de risotto \u00e0 l'aide d'un emporte-pi\u00e8ce. Faire dorer des 2 c\u00f4t\u00e9s dans le reste de l'huile et r\u00e9server au chaud.\r\n\r\nFaire revenir les l\u00e9gumes dans le beurre, mouiller avec le Vermouth. Ajouter le bouillon, cuire \u00e0 couvert presque \u00e0 point. Ajouter la cr\u00e8me et terminer la cuisson sans couvercle. Ajouter un peu de zeste de citron, assaisonner avec un peu de jus de citron, le sel et le poivre. Effeuiller le cerfeuil et le parsemer sur les l\u00e9gumes avec le poivre rose.
