Hacher finement l'oignon et l'ail. Faire chauffer l'huile et y faire revenir le c\u00e9leri-rave, l'oignon et l'ail. Ajouter le riz et faire cuire jusqu'\u00e0 ce qu'il soit transparent. Incorporer le bouillon au fur et \u00e0 mesure en remuant, faire mijoter 20 minutes.\r\n\r\nPendant ce temps, faire dorer les pignons dans une po\u00eale. Pr\u00e9lever le zeste d'une orange. Peler les 2 oranges avec un couteau et retirer les parties blanches. R\u00e2per finement l'Emmentaler AOP. Incorporer les pignons, les quartiers d'orange, la roquette et l'Emmentaler AOP au riz.
