Verser la semoule de ma\u00efs en pluie en remuant et faire mijoter 30-40 minutes \u00e0 couvert en remuant de temps en temps. Couper le Emmentaler AOP en petits d\u00e9s d' 1 cm.\r\n\r\nFaire cuire les \u00e9pinards dans une grande quantit\u00e9 d'eau bouillante sal\u00e9e. D\u00e8s que les \u00e9pinards se d\u00e9font, les \u00e9goutter et les refroidir \u00e0 l'eau froide.\r\n\r\nCouper les champignons en 2 ou en 4, hacher finement l'oignon. Faire chauffer l'huile d'olive, y faire revenir les champignons et mouiller au Sherry. Faire mijoter 10 minutes jusqu'\u00e0 \u00e9vaporation presque compl\u00e8te du liquide. Presser un peu les \u00e9pinards et les m\u00e9langer aux champignons. Ajouter le bouillon et chauffer bri\u00e8vement. Assaisonner avec le sel, le poivre et la noix de muscade.\r\n\r\nIncorporer une bonne moit\u00e9 des d\u00e9s de fromage \u00e0 la polenta.
