Oter les grains de l'\u00e9pi \u00e0 l'aide d'un couteau pour obtenir environ 500 grains. Porter \u00e0 \u00e9bullition le bouillon et les \u00e9pis de ma\u00efs et laisser mijoter 20 minutes \u00e0 couvert. R\u00e9duire le ma\u00efs en pur\u00e9e la plus fine possible. Ajouter la semoule de ma\u00efs et faire mijoter 10 minutes en remuant r\u00e9guli\u00e8rement. Ajouter ensuite l'Emmentaler AOP, saler et poivrer.\r\n\r\nPendant que la polenta cuit, couper les poivrons en 2, les \u00e9p\u00e9piner et les couper en lani\u00e8res d'1 cm de large. Couper l'oignon en 2 et le couper en fines lani\u00e8res. Hacher finement l'ail. Faire chauffer l\u00e9g\u00e8rement l'huile d'olive et y faire revenir les poivrons, l'oignon et l'ail, saler et poivrer. Faire cuire 15 minutes \u00e0 couvert. Couper les tomates en d\u00e9s, ajouter 1 dl d'eau et et laisser cuire encore 10 minutes.
