Couper le poireau en fines rondelles. Eplucher le c\u00e9leri et les carottes et les couper en petits d\u00e9s. Hacher l\u2019oignon finement. Couper les champignons en tranches de 5 mm. Faire chauffer l\u2019huile dans une grande po\u00eale. Faire revenir les champignons \u00e0 feu vif. Ajouter les l\u00e9gumes et les c\u00e8pes \u00e9goutt\u00e9s et laisser cuire le tout 5 minutes \u00e0 feu doux. Ajouter la pur\u00e9e de tomate et poursuivre bri\u00e8vement la cuisson. D\u00e9glacer avec le bouillon. Ajouter le thym et porter \u00e0 \u00e9bullition 5 \u00e0 7 minutes.\r\n\r\nR\u00e2per finement l\u2019Emmentaler AOP. Mettre la farine, la levure et le sel dans un saladier. Ajouter le beurre coup\u00e9 en petits morceaux. Travailler du bout des doigts jusqu\u2019\u00e0 obtention d\u2019une p\u00e2te grumeleuse. Incorporer 120 g d\u2019Emmentaler AOP r\u00e2p\u00e9. Battre les \u0153ufs avec le lait, ajouter et m\u00e9langer le tout de fa\u00e7on \u00e0 obtenir une p\u00e2te souple.\r\n\r\nVerser le rago\u00fbt de champignons dans un grand plat \u00e0 gratin.
