Hacher finement l'oignon. Faire chauffer l'huile, y faire revenir le lard, r\u00e9server.\r\n\r\nFaire bri\u00e8vement revenir les panais dans la m\u00eame po\u00eale pendant 3 minutes environ puis les oignons. Ajouter les pommes de terre, mouiller avec le bouillon puis faire mijoter 20-30 minutes jusqu'\u00e0 tendret\u00e9. Mixer les l\u00e9gumes pour la soupe, diluer \u00e9ventuellement avec un peu de bouillon. Ajouter le lard \u00e0 la soupe. Assaisonner avec la moutarde, le sel et le poivre.\r\n\r\nCouper la ciboulette en b\u00e2tonnets. Couper l'Emmentaler AOP en tranches de 3 mm et le pain en tranches de 7 mm d'\u00e9paisseur. Disposer les tranches de pain sur une plaque allant au four et les faire dorer sous le gril.
