Cuire \u00e0 tendret\u00e9 dans de l\u2019eau sal\u00e9e bouillante avec les p\u00e2tes. Egoutter et rincer \u00e0 l\u2019eau froide. Equeuter les haricots, les couper en deux et faire cuire dans le bouillon avec un couvercle de mani\u00e8re \u00e0 ce qu\u2019ils restent croquants. R\u00e9server 1 dl de bouillon de haricots pour la sauce.\r\n\r\nFaire griller les graines de tournesol dans une po\u00eale sans mati\u00e8re grasse. Hacher grossi\u00e8rement le persil. Mettre les graines et le persil avec le bouillon de haricots et l\u2019ail dans un pichet haut et r\u00e9duire en pur\u00e9e au mixeur. Incorporer l\u2019huile de colza et le vinaigre. Saler et poivrer la sauce.\r\n\r\nCouper l\u2019Emmentaler AOP en d\u00e9s.
