M\u00e9langer la farine, les \u0153ufs, le sel et la pur\u00e9e de courges dans un saladier, fouetter jusqu'\u00e0 obtenir une p\u00e2te lisse et laisser reposer 30 minutes.\r\n\r\nHacher finement l'oignon, couper le poireau en rondelles et les faire revenir ensemble dans de l'huile chaude puis mouiller avec le cidre. Ajouter le bouillon et les marrons, faire mijoter 10 minutes, assaisonner avec le romarin, le sel et le poivre.\r\n\r\nCouper l'Emmentaler AOP en petits d\u00e9s. Faire chauffer une grande casserole d'eau sal\u00e9e et faire tomber la p\u00e2te, portion par portion, dans la casserole \u00e0 l'aide d'une r\u00e2pe \u00e0 kn\u00f6pfli. Les sortir avec une \u00e9cumoire d\u00e8s qu'ils remontent \u00e0 la surface.
