Ajouter de l'eau et p\u00e9trir la p\u00e2te jusqu'\u00e0 ce qu'elle soit souple. Laisser reposer au frais environ 1 heure.\r\n\r\nCouper les feuilles vertes et les tiges des blettes s\u00e9par\u00e9ment en lani\u00e8re d'1 cm. Faire chauffer l'huile et y faire revenir les tiges 3-4 minutes. Ajouter les feuilles et continuer la cuisson jusqu'\u00e0 ce que les feuilles se d\u00e9fassent. Y presser l'ail, saler et poivrer, laisser refroidir.\r\n\r\nAbaisser la p\u00e2te et garnir la plaque \u00e0 g\u00e2teau. Piquer la p\u00e2te \u00e0 la fourchette et y r\u00e9partir 50 g d'Emmentaler AOP. D\u00e9poser les blettes sur la p\u00e2te. M\u00e9langer les \u0153ufs avec la cr\u00e8me, le lait et le reste de fromage.
