Faire fondre un peu de beurre dans une grande po\u00eale anti-adh\u00e9sive et y faire cuire 8 cr\u00eapes.\r\n\r\nHacher grossi\u00e8rement les noix. Hacher finement les herbes et les m\u00e9langer avec les noix, la ricotta et 125 g d'Emmentaler AOP. Assaisonner avec le sel, le poivre et le zeste de citron. R\u00e9partir la farce sur les cr\u00eapes, les rouler et les disposer dans un plat \u00e0 gratin. R\u00e9partir les tomates par dessus et parsemer le reste du fromage puis verser l'huile.
