Faire dorer les pignons dans une po\u00eale sans ajout de mati\u00e8re grasse. Couper les abricots en petits d\u00e9s. R\u00e2per finement l\u2019Emmentaler AOP.\r\n\r\nM\u00e9langer le s\u00e9r\u00e9, le Sherry, les abricots, les pignons et le fromage r\u00e2p\u00e9.\r\n\r\nMettre la cr\u00e8me et la g\u00e9latine \u00e9goutt\u00e9e dans une petite casserole. Faire chauffer doucement en remuant jusqu\u2019\u00e0 ce que la g\u00e9latine soit dissoute. Incorporer au m\u00e9lange fromage-s\u00e9r\u00e9. Assaisonner g\u00e9n\u00e9reusement.\r\n\r\nGarnir le fond de la terrine avec 1\/3 des tranches de fromage. Verser la moiti\u00e9 de la pr\u00e9paration puis d\u00e9poser une nouvelle couche de tranches de fromage. Verser le reste de la p\u00e2te et terminer par le fromage restant. Mettre au frais pendant 3 heures au moins.\r\n\r\nCouper les abricots en tranches et porter \u00e0 \u00e9bullition dans 1 dl d\u2019eau, laisser gonfler pendant 30 minutes, ajouter la moutarde et le miel et reduire en pur\u00e9e pas trop fine.
