Les \u00e9goutter et les d\u00e9couper en tranches de 3 mm.\r\n\r\nHacher grossi\u00e8rement les noisettes et les faire griller quelques minutes dans une grande po\u00eale, r\u00e9server. Faire revenir le lard sans ajout de graisse jusqu'\u00e0 ce qu'il soit croustillant, r\u00e9server. Faire chauffer le beurre et l'huile d'olive et y faire rissoler les pommes de terre \u00e0 feu vif pendant 10-12 minutes en les retournant de temps en temps.\r\n\r\nCouper le bulbe des oignons de printemps en 4 ou en 2. D\u00e9couper les fanes en rondelles de 2 cm de long. Ajouter les bulbes et les fanes aux pommes de terre, saler et poivrer. Faire mijoter \u00e0 feu doux 10 minutes en remuant de temps en temps.\r\n\r\nEffeuiller les brins de marjolaine, couper le Emmentaler AOP en d\u00e9s d'1 cm. Incorporer les d\u00e9s de formage, les noisettes, le lard et la marjolaine aux pommes de terre.
