Faire cuire le chapeau \u00e0 la vapeur pendant 3 minutes, ouverture vers le haut. D\u00e9poser dans un moule \u00e0 gratin, saler l\u00e9g\u00e8rement.\r\n\r\nHacher finement l'ail et les queues de champignons et faire revenir bri\u00e8vement dans l'huile chaude. Couper tr\u00e8s finement l'ail des ours. R\u00e2per finement l'Emmentaler AOP et le m\u00e9langer au vin blanc, \u00e0 la chapelure, \u00e0 l'ail des ours et aux queues de champignon.
