Egoutter et les refroidir \u00e0 l'eau froide. R\u00e2per finement l'Emmentaler AOP. R\u00e9duire en pur\u00e9e les oignons de printemps \u00e9goutt\u00e9s et le fromage \u00e0 l'aide du mixeur plongeant, saler et poivrer.\r\n\r\nD\u00e9rouler le gigot et le badigeonner avec la moutarde puis la pur\u00e9e d'oignons de printemps. Rouler le gigot et le ficeler avec de la ficelle de cuisine, saler et poivrer.\r\n\r\nCouper les carottes et le chou-rave en morceaux. Faire chauffer l'huile dans une po\u00eale et y faire revenir bri\u00e8vement les l\u00e9gumes et le gigot. Mouiller au vin blanc. Faire cuire 1h30 environ \u00e0 160\u00b0C dans le milieu du four. Arroser r\u00e9guli\u00e8rement de vin.\r\n\r\nVerser le liquide dans une po\u00eale et faire r\u00e9duire de moiti\u00e9 \u00e0 feu vif. Incorporer le beurre \u00e0 l'aide du mixeur plongeant.
