S\u00e9parer quelques tranches de poireau. Faire blanchir 1-2 minutes dans une grande casserole d'eau bouillante. Les sortir \u00e0 l'aide d'une \u00e9cumoire et les refroidir \u00e0 l'eau froide. Beurrer des petits moules (3,5 dl environ) et les garnir de poireau \u00e9goutt\u00e9.\r\n\r\nR\u00e2per les carottes sur une r\u00e2pe \u00e0 r\u00f6sti. Couper le chou en fines lani\u00e8res. Faire chauffer l'huile et y faire revenir les l\u00e9gumes. Ajouter le bouillon et faire mijoter, les l\u00e9gumes doivent rester croquants. Laisser refroidir.\r\n\r\nCiseler le persil. R\u00e2per finement l'Emmentaler. Battre les \u0153ufs et les m\u00e9langer au lait, au persil et au fromage. Y presser l'ail. Assaisonner avec la noix de muscade, saler et poivrer.\r\n\r\nM\u00e9langer les l\u00e9gumes et l'appareil et verser cette pr\u00e9paration dans les moules. Faire cuire 30-40 minutes \u00e0 200\u00b0C au milieu du four en les couvrant \u00e9ventuellement d'un papier d'aluminium.\r\n\r\nD\u00e9mouler les galettes et les dresser sur les assiettes.
