Mettre 25 g de fromage dans un saladier avec la farine, le sel et l'huile d'olive. Emietter la levure et la mettre dans le saladier avec l'eau et p\u00e9trir ce m\u00e9lange pendant 5-10 minutes pour obtenir une p\u00e2te souple. Couvrir la p\u00e2te et la faire lever dans un endroit o\u00f9 la temp\u00e9rature est \u00e9lev\u00e9e, elle doit doubler de volume.\r\n\r\nPour la farce, couper les courgettes et les poivrons en petits d\u00e9s de 5 mm. Hacher finement l'ail et les herbes. R\u00e9server 2 c. \u00e0 s. de fromage et m\u00e9langer le reste du fromage avec les courgettes, les poivrons, les herbes, l'ail et les c\u00e2pres, saler et poivrer.\r\n\r\nAbaisser la p\u00e2te en un carr\u00e9 de 20 x 35 cm et la badigeonner de pur\u00e9e de tomate. R\u00e9partir la farce dessus et tasser un peu. Enrouler la p\u00e2te bien serr\u00e9e sur le c\u00f4t\u00e9 le plus long et la couper en rondelles de 3 cm. D\u00e9poser les rondelles sur une plaque recouverte de papier sulfuris\u00e9 et parsemer du fromage restant puis faire cuire 20 minutes au four \u00e0 220\u00b0C.
