Badigeonner de chaque c\u00f4t\u00e9 avec un peu d\u2019huile, saler, poivrer. Disposer les tranches les unes \u00e0 c\u00f4t\u00e9 des autres sur une plaque garnie de papier sulfuris\u00e9 et enfourner 12 minutes environ \u00e0 220 \u00b0C (convection naturelle). Retirer la plaque du four et r\u00e9duire la temp\u00e9rature \u00e0 180 \u00b0C.\r\n\r\nR\u00e2per grossi\u00e8rement l\u2019Emmentaler AOP. Couper les tomates en tranches de 5 \u00e0 7 mm d\u2019\u00e9paisseur, saler, poivrer. Effeuiller les tiges d\u2019origan. Coupes les escalopes en deux, saler, poivrer et saupoudrer de farine. Faire chauffer l\u2019huile dans une po\u00eale. Y faire revenir les escalopes \u00bd minute de chaque c\u00f4t\u00e9.\r\n\r\nAssembler en couches superpos\u00e9es un morceau d\u2019escalope, une tranche d\u2019aubergine, une tranche de tomate, l\u2019origan et le fromage de fa\u00e7on \u00e0 former 12 petites tours.
