Plonger les tomates 30 secondes dans l\u2019eau bouillante, puis les passer imm\u00e9diatement sous l\u2019eau froide. Peler les tomates, les couper en gros d\u00e9s et les r\u00e9duire en pur\u00e9e fine au mixeur. Saler, poivrer, r\u00e9partir dans des coupelles.\r\n\r\nRetirer les fils coriaces des branches de c\u00e9leri. Couper le poivron en deux et retirer les p\u00e9pins. Couper le c\u00e9leri, le poivron, le concombre et l\u2019Emmentaler AOP en b\u00e2tonnets d\u2019environ 10 cm de long et 1 cm de large. Effeuiller les brins de basilic.\r\n\r\nRetirer le trognon des feuilles de laitue. Plier les feuilles dans le sens de la longueur. R\u00e9partir le c\u00e9leri, le poivron, le concombre, le fromage et le basilic de fa\u00e7on \u00e9gale sur les feuilles de laitue.
