R\u00e2per finement le Emmentaler AOP. Mettre la ricotta dans un saladier avec la moiti\u00e9 du fromage et y presser la gousse d'ail. Assaaisonner avec le sel, le poivre et la noix de muscade, bien m\u00e9langer et verser dans un moule \u00e0 gratin.\r\n\r\nRetirer la queue des champignons. Hacher le pain au mixeur et m\u00e9langer le pain, le reste du fromage, les noisettes, le vin blanc, le sel et le poivre.
