Couper les \u00e9chalottes en lani\u00e8res. Retirer si n\u00e9cessaire le filament de la cosse des pois mange-tout et les couper en diagonale.\r\n\r\nCouper le lard en larges lani\u00e8res et le faire revenir dans une po\u00eale, r\u00e9server. Faire dorer les \u00e9chalotes et les pois mange-tout dans la graisse de cuisson. Ajouter le bouillon et faire cuire quelques minutes les pois mange-tout qui doivent rester croquants. M\u00e9langer les pois mange-tout, les \u00e9chalotes et un peu de liquide avec la sauce et laisser refroidir quelques instants.\r\n\r\nCouper l'Emmentaler AOP en d\u00e9s d'1 cm.
