Couvrir et laisser reposer \u00e0 temp\u00e9rature ambiante env. 30 minutes jusqu\u2019\u00e0 ce que le levain fasse des bulles.\r\n\r\nM\u00e9langer le reste de la farine et le sel. Ajouter le levain et le reste de l\u2019eau min\u00e9rale. Rassembler en p\u00e2te et p\u00e9trir vigoureusement. Couvrir la p\u00e2te avec un linge humide et laisser gonfler env. 2 heures jusqu\u2019\u00e0 ce qu\u2019elle ait doubl\u00e9 de volume. Autre possibilit\u00e9: la mettre dans un sachet de cong\u00e9lation et l\u2019entreposer toute une nuit au r\u00e9frig\u00e9rateur.\r\n\r\nPour la suite, p\u00e9trir de nouveau la p\u00e2te rapidement avant de la diviser en plusieurs portions d\u2019env. 70\u201380 g. Sur le plan de travail l\u00e9g\u00e8rement farin\u00e9, former des boules. Dresser celles-ci, suffisamment espac\u00e9es, sur une plaque recouverte de papier cuisson.\r\n\r\nAvec une lame tranchante, inciser les boules de p\u00e2te en croix, les asperger d\u2019eau et les parsemer de p\u00e9pins de courge et d\u2019Emmentaler AOP r\u00e2p\u00e9. Laisser lever env. 1 heure \u00e0 temp\u00e9rature ambiante. Pr\u00e9chauffer le four \u00e0 220 \u00b0C.\r\n\r\nEnfourner et laisser cuire env. 20 minutes au milieu du four.
