Mettre les fanes de c\u00f4t\u00e9. Faire revenir les oignons de printemps dans l'huile chaude. Ajouter le riz et faire revenir bri\u00e8vement. Mouiller avec le cidre. Ajouter le bouillon au fur et \u00e0 mesure. Faire mijoter pendant 20 minutes sans cesser de remuer.\r\n\r\nPendant que le riz cuit, parer les asperges et \u00e9plucher le dernier tiers puis les couper en petits morceaux. Les faire cuire 5 -10 minutes \u00e0 la vapeur ou dans un peu d'eau bouillante sal\u00e9e.\r\n\r\nHacher grossi\u00e8rement les noisettes et les faire dorer \u00e0 la po\u00eale. R\u00e2per finement le Rahmtaler.\r\n\r\nIncorporer les asperges, les oignons de printemps, la cr\u00e8me aigre et le Rahmtaler au risotto, saler et poivrer.
