M\u00e9langer les tomates avec l\u2019ail, les fines herbes, les c\u00e2pres et l\u2019huile d\u2019olive. R\u00e9partir sur une plaque chemis\u00e9e de papier cuisson. Glisser la plaque au milieu du four pr\u00e9chauff\u00e9, faire r\u00f4tir env. 50 minutes. Sortir du four. R\u00e9duire en pur\u00e9e la moiti\u00e9 des tomates et le bouillon de poule, garder au chaud dans une casserole (\u00e0 petit feu).\r\n\r\nJeter l\u2019eau de cuisson de l\u2019\u00e9peautre ou du riz, bien \u00e9goutter. Faire chauffer l\u2019huile d\u2019olive et 1 c. s. de beurre. Ajouter l\u2019oignon, le faire suer. Ajouter l\u2019\u00e9peautre ou le riz, faire revenir en remuant. Mouiller au vin blanc, faire r\u00e9duire. Ajouter les tomates au bouillon, faire cuire doucement 50\u201360 minutes. Ajouter le reste de beurre, couvrir, \u00e9loigner la casserole du feu. A couvert, laisser reposer le risotto 5 minutes.
