Partager les bulbes en deux dans la longueur, badigeonner de jus de citron. M\u00e9langer l\u2019Emmentaler AOP, les miettes de pain, le persil et le zeste de citron. Battre les \u0153ufs avec le sel dans une assiette creuse. Verser la farine dans un plat.\r\n\r\nPasser le fenouil d\u2019abord dans la farine, ensuite dans l\u2019\u0153uf battu et pour finir dans le m\u00e9lange au fromage pour l\u2019enrober. Tasser la panure pour la faire adh\u00e9rer. Disposer sur une plaque chemis\u00e9e de papier cuisson. Arroser avec le beurre \u00e0 r\u00f4tir liquide. Laisser cuire env. 30 min au milieu du four pr\u00e9chauff\u00e9 \u00e0 170 \u00b0C. Autre possibilit\u00e9: Chauffer du beurre \u00e0 r\u00f4tir dans une grande po\u00eale antiadh\u00e9sive et faire dorer le fenouil sur feu moyen, en le retournant plusieurs fois.\r\n\r\nDresser avec des quartiers de citron.\r\n\r\nSuggestion: au d\u00e9but de la saison, au printemps, le fenouil est tr\u00e8s tendre. Il est alors possible de le paner cru.
