Les faire blanchir dans une grande casserole d'eau sal\u00e9e. Les \u00e9goutter et les refroidir \u00e0 l'eau froide. Presser l\u00e9g\u00e8rement le chou frise\u00e9.\r\n\r\nEplucher les pommes de terre, les couper en tranches de 5 mm, les faire cuire dans de l'eau bouillante sal\u00e9e. Eplucher les poires et les couper en tranches. Mettre les pommes de terre et les poires dans un moule \u00e0 gratin et r\u00e9partir le chou par dessus.\r\n\r\nR\u00e2per finement l'Emmentaler AOP. Battre les \u0153ufs avec le lait, le s\u00e9r\u00e9, la moutarde et 100 g de fromage. Saler et poivrer et verser sur le chou. Faire cuire 15 minutes \u00e0 180\u00b0C.\r\n\r\nHacher grossi\u00e8rement les noix, les m\u00e9langer avec le reste du fromage et r\u00e9partir sur le gratin.
