Pr\u00e9parer une sauce avec le jus de limette, l\u2019huile, 2 c. \u00e0 s. d\u2019eau, le sel et le poivre et la m\u00e9langer avec les carottes, l\u2019oignon de printemps et le persil.\r\n\r\nFaire cuire \u00e0 couvert les petits pois avec le bouillon et les gousses d\u2019ail pendant 5-10 minutes. R\u00e9duire grossi\u00e8rement en pur\u00e9e les petits pois avec 2-3 c. \u00e0 s. de fonds de l\u00e9gumes au mixeur plongeant et laisser refroidir. R\u00e2per l\u2019Emmentaler AOP en gros copeaux, les m\u00e9langer aux petits pois, saler et poivrer.\r\n\r\nEtaler uniform\u00e9ment la p\u00e2te de petits pois sur les tortillas en laissant un pourtour d\u20191,5 cm. Replier les tortillas et les faire cuire 2-3 minutes de chaque c\u00f4t\u00e9 dans une po\u00eale.
