Faire fondre le beurre dans une po\u00eale. Retirer la po\u00eale du feu et y verser le reste du lait. M\u00e9langer la farine et le sel dans un saladier. Couper les tomates en petits morceaux. Hacher finement le persil. R\u00e9server 2 cuill\u00e8res \u00e0 soupe d\u2019Emmentaler AOP pour saupoudrer. Battre l\u2019\u0153uf. Ajouter la moiti\u00e9 de l\u2019\u0153uf, le fromage, les tomates, le persil et la pr\u00e9paration \u00e0 base de beurre et de lait et p\u00e9trir le tout pendant une dizaine de minutes jusqu\u2019\u00e0 obtention d\u2019une p\u00e2te souple. Couvrir la p\u00e2te et laisser lever dans un endroit chaud jusqu\u2019\u00e0 ce qu\u2019elle ait doubl\u00e9 de volume.\r\n\r\nFormer une boule avec un quart de la p\u00e2te. La poser sur une plaque garnie de papier sulfuris\u00e9. Former des petites boules avec le reste de la p\u00e2te. Dissimuler l\u2019amande dans une de ces boules. Disposer les petites boules tout autour de la grosse boule de p\u00e2te. Laisser lever 20 minutes. Badigeonner la p\u00e2te avec le reste de l\u2019\u0153uf, saupoudrer de fromage et de graines de s\u00e9same.
