En couper l\u2019\u00e9corce en laissant 5 mm de chair. R\u00e9cup\u00e9rer la partie rouge, la prot\u00e9ger d\u2019un film alimentaire et la mettre au r\u00e9frig\u00e9rateur. Avec l\u2019\u00e9conome, peler la partie verte ext\u00e9rieure de l\u2019\u00e9corce et couper celle-ci en morceaux de 2 cm. Porter \u00e0 \u00e9bullition le vinaigre, l\u2019eau et le sucre avec le gingembre, le sel et les \u00e9pices. Faire cuire 10 minutes \u00e0 petit feu. Ajouter l\u2019\u00e9corce coup\u00e9e. Faire cuire 10 minutes \u00e0 petit feu. Retirer la casserole du feu. Laisser refroidir 30 minutes.\r\n\r\nVerser l\u2019\u00e9corce cuite dans des bocaux rinc\u00e9s \u00e0 l\u2019eau chaude. Porter encore une fois le liquide \u00e0 \u00e9bullition, en remplir les bocaux jusqu\u2019au bord, fermer. Prot\u00e9ger les bocaux avec une couverture et laisser refroidir. Conservation: 2\u20133 semaines en bocal bien ferm\u00e9 et conserv\u00e9 au r\u00e9frig\u00e9rateur.\r\n\r\nPiquer les morceaux d\u2019\u00e9corce de past\u00e8que sur les d\u00e9s d\u2019Emmentaler AOP.
