Couper les raisins en 2 et hacher grossi\u00e8rement les baies de geni\u00e8vre.\r\n\r\nPour la sauce, faire fondre le beurre dans une petite po\u00eale et y faire revenir bri\u00e8vement les raisins et les baies de geni\u00e8vre. Mouiller au Sherry et faire un peu r\u00e9duire. Diluer la ma\u00efzena dans le fond de boeuf, l'ajouter \u00e0 la sauce et faire mijoter 1-2 minutes en remuant. Effeuiller le thym dans la sauce, saler et poivrer.\r\n\r\nFaire chauffer le beurre \u00e0 r\u00f4tir. Saler et poivrer les steacks et les saisir \u00e0 feu vif, 30 secondes d'1 c\u00f4t\u00e9, 1 minute pour l'autre. Retirer la po\u00eale du feu et baisser le feu. Couvrir les steacks des tranches de fromage en veillant \u00e0 les mettre sur le c\u00f4t\u00e9 le plus cuit. Couvrir la po\u00eale et faire cuire encore 3-5 minutes.
