Battre les \u0153ufs et l\u2019eau min\u00e9rale. Ajouter ce liquide \u00e0 la farine sal\u00e9e en remuant, lisser. Battre vigoureusement la p\u00e2te jusqu\u2019\u00e0 ce qu\u2019elle fasse des bulles et qu\u2019elle tombe lourdement de la spatule. Couvrir et laisser reposer env. 30 minutes \u00e0 temp\u00e9rature ambiante.\r\n\r\nCouper les pommes en deux, \u00e9vider le c\u0153ur, couper en quartiers. Arroser avec le jus de citron et faire cuire doucement \u00e0 couvert et \u00e0 petit feu, en gardant l\u00e9g\u00e8rement croquant, laisser refroidir.\r\n\r\nRemplir d\u2019eau une large casserole, porter \u00e0 \u00e9bullition, saler. Mouiller une planche \u00e0 l\u2019eau froide et y placer une portion de p\u00e2te. Avec une cornette \u00e0 p\u00e2te ou un long couteau droit mouill\u00e9s, couper de fines lani\u00e8res de p\u00e2te directement dans l\u2019eau fr\u00e9missante. Porter \u00e0 \u00e9bullition. Apr\u00e8s chaque portion, d\u00e8s que les sp\u00e4tzlis remontent \u00e0 la surface, les retirer \u00e0 l\u2019\u00e9cumoire, bien \u00e9goutter. Faire fondre le beurre dans une po\u00eale. Passer les sp\u00e4tzlis au beurre chaud.\r\n\r\nLes mettre dans un plat creux chaud, en alternant les couches avec de l\u2019Emmentaler AOP.
