Couper les carottes en petits d\u00e9s. R\u00e2per finement le zeste du citron, presser le jus. Verser le tout dans un plat \u00e0 gratin avec le riz et le bouillon et bien m\u00e9langer. Couvrir le plat d\u2019une feuille d\u2019aluminium et enfourner. \r\n\r\nSaler et poivrer l\u00e9g\u00e8rement les blancs de poulet avant de les enrouler avec les tranches de jambon cru. Disposer les papillotes de poulet sur une plaque recouverte de papier sulfuris\u00e9. Apr\u00e8s 30 minutes, mettre les filets de poulet dans le four avec le risotto et poursuivre la cuisson 15 minutes.\r\n\r\nCouper 2 \u00e0 3 tranches fines d\u2019Emmentaler AOP. D\u00e9couper des c\u0153urs \u00e0 l\u2019aide d\u2019un emporte-pi\u00e8ce. R\u00e2per finement le fromage restant. Incorporer le fromage r\u00e2p\u00e9 et la cr\u00e8me au risotto.
