Eplucher les pommes de terre et les couper en rondelles de 0,5\u00a0cm d\u2019\u00e9paisseur environ. Faire cuire les choux de Bruxelles dans un peu d\u2019eau sal\u00e9e jusqu\u2019\u00e0 tendret\u00e9. Faire cuire les p\u00e2tes al dente dans de l\u2019eau sal\u00e9e. Ajouter les rondelles de pomme de terre 5\u00a0minutes avant la fin de la cuisson. Bien \u00e9goutter le tout.\r\n\r\nPour la sauce, porter le lait et l\u2019amidon de ma\u00efs \u00e0 \u00e9bullition sans cesser de remuer. Ajouter l\u2019Emmentaler AOP suisse, faire fondre \u00e0 petit feu tout en remuant, saler, poivrer et relever avec un peu de noix de muscade.
