Saler et poivrer les escalopes, badigeonner l\u2019int\u00e9rieur de moutarde. R\u00e9partir la farce sur les escalopes, refermer et bien presser les bords pour maintenir le tout. Passer la viande dans la farine, puis dans\u00a0 l\u2019\u0153uf et enfin, dans la chapelure.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Couper le potiron en d\u00e9s. Porter la pur\u00e9e de tomate, le jus d\u2019orange, le bouillon et le vinaigre \u00e0 \u00e9bullition. Ajouter le potiron et cuire jusqu\u2019\u00e0 tendret\u00e9. Si la sauce est trop liquide, laisser r\u00e9duire encore un peu. Rectifier l\u2019assaisonnement et ajouter le basilic.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Faire dorer la viande dans le beurre chaud environ 3\u00a0minutes de chaque c\u00f4t\u00e9, servir avec le rago\u00fbt de potiron.
