Hacher finement l\u2019oignon, faire revenir dans le beurre chaud avec les champignons. Ajouter le bouillon et le lait, porter \u00e0 \u00e9bullition, verser la semoule de ma\u00efs en pluie sans cesser de remuer. Laisser mijoter 45\u00a0minutes en remuant de temps en temps. Incorporer l\u2019Emmentaler AOP \u00e0 la polenta, saler et poivrer.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Hacher finement l\u2019\u00e9chalote. Saler et poivrer le filet mignon de porc. Parsemer de thym et saisir dans l\u2019huile chaude. Poser la viande sur une grille \u00e0 p\u00e2tisserie et cuire environ 15\u00a0minutes au four pr\u00e9chauff\u00e9 \u00e0 150\u00a0\u00b0C. M\u00e9langer l\u2019\u00e9chalote avec le sucre et la farine, verser dans la casserole l\u00e9g\u00e8rement refroidie et faire revenir \u00e0 feu doux. Ajouter le vin rouge petit \u00e0 petit et laisser r\u00e9duire un instant.
