D\u00e9couper un couvercle sur le dessus des tomates, creuser ces derni\u00e8res avec pr\u00e9caution, couper la chair pr\u00e9lev\u00e9e en morceaux et r\u00e9server. Dans un saladier, m\u00e9langer le riz avec les olives, les c\u00e2pres, les tomates cerise coup\u00e9es en petits d\u00e9s et la chair des tomates c\u0153ur de b\u0153uf; assaisonner avec de l\u2019huile d\u2019olive et un peu de zeste de citron et m\u00e9langer d\u00e9licatement. Ajouter la menthe hach\u00e9e et 100\u00a0g d\u2019Emmentaler AOP coup\u00e9 en petits d\u00e9s. Saler et garnir les tomates avec la pr\u00e9paration \u00e0 base de riz. D\u00e9corer avec quelques d\u00e9s d\u2019Emmentaler AOP et les c\u00e2prons.
