D\u00e8s que le sucre est dissout, ajouter les marrons cuits et un morceau d\u2019\u00e9corce d\u2019orange et laisser mijoter 15 minutes \u00e0 petit feu. Retirer l\u2019\u00e9corce d\u2019orange et mixer la pr\u00e9paration avec une cuill\u00e8re \u00e0 soupe de miel de ch\u00e2taigne et une pinc\u00e9e de sel.\r\n\r\n<strong>Compote d\u2019oignon:<\/strong>\r\nCouper les oignons en rondelles tr\u00e8s fines et faire suer dans une casserole avec une cuill\u00e8re \u00e0 soupe d\u2019huile et la feuille de laurier; saupoudrer de sucre et laisser fondre ce dernier jusqu\u2019\u00e0 ce qu\u2019il commence \u00e0 caram\u00e9liser. D\u00e9glacer avec le vinaigre et un peu d\u2019eau bouillante, ajouter une pinc\u00e9e de sel. Couvrir et laisser mijoter une demi-heure environ \u00e0 petit feu, remuer de temps \u00e0 autre pour que la compote n\u2019attache pas.\r\n\r\n<strong>Cr\u00e8me de potiron:<\/strong>\r\nCouper la chair de potiron en tranches, arroser d\u2019un peu d\u2019huile d\u2019olive, parsemer de quelques grains de gros sel et cuire au four \u00e0 170\u00b0C pendant 30 minutes. Lorsque le potiron est tendre, mixer finement jusqu\u2019\u00e0 obtention d\u2019une cr\u00e8me \u00e9paisse. Allonger si besoin avec un peu de bouillon de l\u00e9gumes.
