Laisser mariner dans le vin rouge avec les l\u00e9gumes en d\u00e9s, l\u2019ail et les graines de moutarde pendant 12 \u00e0 24\u00a0heures au r\u00e9frig\u00e9rateur. Retirer les morceaux de poulet, tamponner avec du papier absorbant, saler, fariner et faire revenir bri\u00e8vement \u00e0 feu vif dans l\u2019huile d\u2019olive. Retirer le poulet de la po\u00eale.\r\n\r\n\u00c9goutter les l\u00e9gumes en r\u00e9servant le vin, les faire dorer dans l\u2019huile de cuisson du poulet, ajouter le concentr\u00e9 de tomate faire revenir le tout. D\u00e9glacer avec un tiers du vin, faire r\u00e9duire jusqu\u2019\u00e0 ce que les l\u00e9gumes attachent l\u00e9g\u00e8rement. R\u00e9p\u00e9ter l\u2019op\u00e9ration deux fois (c\u2019est un peu fastidieux, mais le go\u00fbt en vaut vraiment la peine!).\r\n\r\nAjouter le poulet, les champignons, le romarin, le laurier et les clous de girofle et recouvrir le tout avec le bouillon de l\u00e9gumes froid. Porter \u00e0 \u00e9bullition et laisser mijoter \u00e0 petit feu et \u00e0 demi-couvert pendant 45\u00a0minutes. Laisser refroidir un instant, d\u00e9tacher la viande de l\u2019os et l\u2019effilocher.\r\n\r\nFaire fondre le beurre jusqu\u2019\u00e0 ce qu\u2019il brunisse l\u00e9g\u00e8rement, laisser d\u00e9canter pour \u00f4ter le petit-lait et laisser refroidir un instant (beurre noisette). Concasser grossi\u00e8rement les noisettes et les ajouter au beurre brun avec les d\u00e9s d\u2019Emmentaler AOP.\r\n\r\nDressage: r\u00e9chauffer la viande effiloch\u00e9e avec les l\u00e9gumes et un peu de jus et dresser entre les feuilles de lasagnes cuites et chaudes.
