Retirer du feu, incorporer l\u2019Emmentaler AOP URTYP, laisser refroidir. Verser la pr\u00e9paration dans une passoire fine et bien essorer la p\u00e2te \u00e0 base de fromage. R\u00e9chauffer la g\u00e9latine tremp\u00e9e avec un peu d\u2019eau, ajouter \u00e0 la pr\u00e9paration. Ajouter le babeurre et mixer bri\u00e8vement. Passer de nouveau dans une passoire fine, verser dans un siphon \u00e0 chantilly et injecter le gaz. Placer pendant 4 heures au r\u00e9frig\u00e9rateur.\r\n\r\n<u>Billes de potiron\r\n<\/u>Porter tous les ingr\u00e9dients (jusqu'au b\u00e2ton de cannelle) \u00e0 \u00e9bullition, \u00e0 l\u2019exception du potiron. Former des petites billes de potiron \u00e0 l\u2019aide d\u2019une cuill\u00e8re parisienne, ajouter dans le fond et porter de nouveau \u00e0 \u00e9bullition. Verser le tout dans un bocal st\u00e9rilis\u00e9, fermer et laisser refroidir.\r\n\r\n<u>Tresse au beurre perdue et d\u00e9coration\r\n<\/u>M\u00e9langer l\u2019\u0153uf, le lait, le sel et le sucre dans un moule \u00e0 gratin. Plonger les tranches de tresse, laisser reposer environ 5\u00a0minutes des deux c\u00f4t\u00e9s. Couper les tranches de tresse en d\u00e9s. Faire chauffer le beurre dans une po\u00eale. R\u00e9duire le feu, faire dorer les d\u00e9s de tresses sur toutes les faces petit \u00e0 petit jusqu\u2019\u00e0 ce qu\u2019ils soient dor\u00e9s.\r\n\r\nDressage: mettre les d\u00e9s de tresse chauds avec les billes de potiron dans un joli verre. Couvrir de mousse.
