Eplucher la poire, l\u2019\u00e9p\u00e9piner et la couper en d\u00e9s de 5 mm. R\u00e2per grossi\u00e8rement le Emmentaler AOP. Effeuiller les brins de marjolaine. Mettre le poireau, la poire, le Emmentaler AOP et la marjolaine dans un saladier, bien m\u00e9langer avec la moutarde et presser un peu cette farce.\r\n\r\nS\u00e9parer le blanc du jaune. Couper la p\u00e2te feuillet\u00e9e en 8 carr\u00e9s de taille \u00e9gale. Badigeonner le pourtour (1 cm) de blanc d\u2019\u0153uf. R\u00e9partir la farce au milieu de du carr\u00e9 de p\u00e2te. Replier les c\u00f4t\u00e9s en diagonale pour former des triangles, presser fermement les bords. Badigeonner les chaussons avec le jaune d\u2019\u0153uf battu.\r\n\r\nDisposer les chaussons sur une plaque allant au four recouverte de papier sulfuris\u00e9 et faire cuire 20 minutes environ au milieu du four pr\u00e9chauff\u00e9 \u00e0 200\u00b0C.
