Tagliare gli asparagi a pezzi di 3 cm. Pelare i cavoli rapa, le patate\u00a0e le carote. Tagliare i cavoli rapa a bastoncini, le patate a fette\u00a0e le carote a rotelline.\r\n\r\nFar bollire il latte e la panna\u00a0con sale e pepe. Aggiungere\u00a0le verdure e le patate e far bollire, con coperchio e a fuoco basso, per ca. 10 minuti. Di tanto in tanto mescolare. Incorporare 100 g di Emmentaler DOP nella verdura\u00a0e mettere il composto in una teglia per gratin. Cuocere in forno a 180 gradi per ca. 10 minuti.\r\n\r\nSminuzzare finemente il prezzemolo. Tritare le nocciole non troppo finemente. Mischiare entrambi\u00a0con il formaggio residuo, il pane grattugiato e l\u2019olio.
