Ingredients

Ingredients for 4 Portions

6-8 slices of stale bread
2 passion fruit
3 tbsp vinegar
3 tbsp rapeseed oil
2 tbsp stock or water
1 tsp mustard
Salt, pepper
175 g Emmentaler AOP
1 hot chili pepper
500 g red and yellow cherry tomatoes
3-4 spring onions
1 bunch of basil

Preparation

Cut the bread into 1.5 cm cubes. Fry until crispy in a large frying pan without using any fat.

Halve the passion fruit, remove the fruit flesh with a spoon and put it into a large salad bowl. Add vinegar, oil, stock, mustard, salt and pepper and mix together to make a dressing.

Cut the Emmentaler AOP into thin sticks. Deseed the hot chili pepper (optional) and cut into thin rings. Halve the cherry tomatoes. Cut the spring onions into rounds. Pick the basil leaves off the stalk. Mix all the ingredients with the dressing and serve at once.
